It is the brainchild of Richards Walford, a Tanners supplier, and Gérard Gauby, a respected local grower. He believes the decomposed granite soils in the cooler climate of the Fenouillèdes area of the Eastern Pyrenees have the potential to produce wine of excellent quality. The first vintage was in 2001 and the vineyards are now 21 hectares, with a further 34 hectares of mountain-side terrain. Wild boar abound in this remote corner, and the surrounding thyme, rosemary, pine and wild garlic contribute to the wine’s character. The vineyards are ancient and have been farmed organically since Le Soula took them over, with biodynamic methods employed since 2008. The grape varieties are predominantly indigenous, including: Macabeu, Rolle, Grenache, Marsanne, Roussanne, Malvoisie and Carignan. Initially the winery was housed in an old house in the mountain village of St Martin de Fenouillet, before being replaced by a more suitable building in nearby Prugnanes.
