From the Thracians to the present day, the only livelihood in the region has been grape growing and wine production. Many ancient authors have praised Thracian wine and the recipes passed down from father to son for generations... This is what inspired me!

Edoardo Miroglio Wine Cellar is surrounded by 220 hectares of vineyards. The winery is an impressive combination of authentic architecture combined with the most modern wine production technologies. The entire complex blends naturally with the surrounding environment.

The cellar is surrounded by vineyards that stretch across the hills. The lake and the region's climate offer excellent conditions for growing grapes. Above the cellar rises the boutique hotel "Soli Invicti", which has a tasting room, an exquisite restaurant, a lobby bar and an outdoor pool. The design and furnishings of the hotel will satisfy even the most sophisticated tastes.

The winery specializes in the production of high-quality white and red wines. The winery's portfolio also includes rosé and naturally sparkling brut wines produced using classic technology. The main brands offered on the Bulgarian and export markets are Elenovo, Edoardo Miroglio, Sant'Ilia, St. Ilia Estate and Soli. Wines from the Elenovo and Edoardo Miroglio series are offered primarily in selected restaurants and hotels, as well as in specialized wine shops, while the Soli, Sant'Ilia and Saint Ilia Estate brands are intended for sales in the retail network in the country and for export.

Since 2013, Edoardo Miroglio winery has received certification for organic vineyards (Bouquet, Traminer, Viognier and Mavrud) and has started production of 3 new organic wines – Bouquet Nouveau, Viognier x Traminer and Mavrud x Viognier.

Terroir

The winery's vineyards are located on the slope leading down to the village of Elenovo. The physico-chemical composition of the soil, the layers of earth, and the microclimate created by the hilly terrain situated at over 400 meters above sea level on "St. Iliya" hill, give the area the necessary characteristics for producing high-quality wines.

Vineyards

The planting density is 5,000 plants per hectare. The winery cultivates the vineyards using the classic Piedmontese viticulture method, valued and replicated worldwide, adapting the cultivation technology to the region's specific characteristics. Growing a fertile and high-quality vineyard cannot be improvised. It requires a lot of hard work and experience, knowledge, and passion.

Climate

In Elenovo, the average spring and autumn temperatures are low and characterized by pronounced temperature differences. The average rainfall values favor viticulture. Summers are warm but not sultry and have low humidity levels.
