Pierre Chavin

Pierre Chavin

Pierre Chavin is the result of a collaborative effort between a winemaker and a wine marketing specialist. Mathilde Boulachin and Fabien Gross are wine lovers with roots in Alsace and Champagne, and they both founded Pierre Chavin in Southern France. The winery is their dream come true, achieved with great passion and hard work. Culture and roots are unequivocally embodied in the innovation and differentiation at the winery.

Climate and Soils

This wine region enjoys a moderate Mediterranean climate with over 3,000 hours of sunshine and little rainfall. These conditions, combined with the cold, strong wind characteristic of Southern France – the Mistral – provide the perfect prerequisites for organic farming.

This area boasts an abundance of different soils, but two are predominant: in the north, the soils are calcareous, and in the other part of the region, the soils are volcanic ash. These contribute significantly to the rich aromas, spiciness, and length of the wines produced in the area.

Wine

It is widely believed that non-alcoholic wines are simply grape juice in an elegant bottle. In most cases, however, this is far from true. It is a real challenge for producers to remove alcohol from fermented juice without compromising the typical qualities, balance, taste characteristics, and quality of the finished product. To compensate for missing properties, a small amount of sugar or grape juice often needs to be added to give the wine a rounder texture. The working methods are entirely technical, and expensive machinery is used for their application.
