The vineyard

Every good fairy tale begins with three brothers and a vineyard. Here, the story is more about three friends who have a dream to cultivate a wasteland. They breathe life into it, using the symbiosis between sun, wind, and earth.

"It all started with a trip my family and I took to Tuscany and my acquaintance with Mario – a 70-year-old hereditary winemaker, who managed to ignite the spark of wine in me. The vineyard project began in 2015 with the planting of 210 decares of vines. The terrain is hilly and is located between the Tsonvo and Eleshnitsa dams (70km from Varna). We used one of the best consulting firms from Tuscany, which performed a soil and climate analysis for the different varieties.

In 2015, we changed the landscape of an uncultivated land. We planted 210 decares of wine varieties such as Merlot, Syrah, Cabernet Sauvignon, Cabernet Franc, Traminer, Chardonnay, Sauvignon Blanc, as well as local varieties such as Tamianka, Dimyat, and Varna Misket. The unique soil, slope, rocky terrain, and southern exposure, along with our enthusiasm, guarantee perfect grape quality. Surrounded by a walnut and oak forest with many gazebos suitable for picnics and several springs with natural water, our vineyard becomes a guardian of traditions and a creator of memories.

Vineyards

Given that the Northern Black Sea coast is the "kingdom" of white wines, we have the Dimyat, Sauvignon Blanc, Chardonnay, Gewürztraminer, and Varnenski Misket varieties. Among the red varieties, we have Cabernet Sauvignon, Merlot, and Cabernet Franc, the latter of which has proven to be an exceptional dominant in the region. Our yield is reduced from 350 to 450 kg per decare. Limited series of 1500 – 2000 bottles per variety. We focus primarily on single-varietal wines of high quality. Our consulting technologist is one of the best agronomists-viticulturists and oenologists in Bulgaria, Stefan Choranov.

Terroir

The Provadia plateau was a seabed thousands of years ago and is one of the oldest inhabited places in Europe. The vineyards are located on hilly terrain with very good drainage and ventilation, which requires minimal spraying of the vines. Leached cinnamon forest and alluvial, alluvial-meadow soils predominate here. The carbonate horizon is washed out to about 40-50cm, which forces the vines to struggle and put down deep roots. The limestones, together with the maritime climate, impart a unique soil complexity that is transferred through the fruit into the wine.

The cellar

Our winery is brand new with state-of-the-art equipment for processing 30 tons of grapes. We have stainless steel tanks of various capacities with thermal jackets, and our press is of the latest generation, allowing us to be flexible and seek the best varietal and terroir expression of the grape varieties. For aging, we use new French 225-liter barriques with different toasts, as well as several Bulgarian and American barrels. We use them for aging red wines and for a portion of the Chardonnay.

Our winery has a production capacity of 30 tons of wine. It is equipped with brand new Italian stainless steel vessels. The red wines age for a minimum of 12 months in French oak barrels. To preserve quality and our personal touch, all wines are in a limited series of up to 600 bottles.
