In every sphere of art, history knows famous creative duos – Ilf and Petrov, Dolce and Gabbana, Luis Buñuel and Salvador Dalí, Pablo Picasso and John Mills, Andy Warhol and Jean-Michel Basquiat... In the field of winemaking and rock music, the Bulgarian wine world knows another famous creative duo – Nikolay Kolev and Lalo Geshev. In short, Deuce Winery.
The combination of enologists and rock musicians is quite promising in itself. Besides music, the two winemakers have been connected by over 15 years of collaborative work. Together, they dedicate themselves to the boldest and most innovative experiments in search of the perfect wines. Their presentation to the public only happens when the result is uncompromising. This project could have also been called "The Firsts Who…" due to Lalo and Niki's constant avant-garde decisions. From the restoration of rare local grape varieties to their ability to think at least "two steps ahead" in winemaking and barrel work, they have significantly expanded the geography and profile of Bulgarian wine.
But let the world simply know it as: Deuce Winery.
If the vintage is not good enough, if we haven't made the wine exactly as we wanted it to be, "Deuce winery" simply won't be released that year. Wine will only be presented when the harvest is exceptional and the product intriguing.
Strict clonal selection for the Chardonnay varietal – only two of the best international clones are used. Yields are extremely low – 250-300 kg/decare. Manual harvesting in crates. Sorting tables, fractioning to extremely meticulous values, low turbidity levels, and the most difficult task – the fermentation process in the barrel itself and the selection of barrels. A lot of attention and literally many sleepless nights are required for the processes to unfold as they should.
The aging in barrels is shorter than usual – our wine ages for 6 to 7 months in the barrel. All processes take place there. We have used almost no fining methods. We believe that when the grapes are ripe and healthy, the wine stabilizes naturally on its own. This type of "barrel fermented" wine is untreated and unstabilized, with almost no filtration. But we also work with extremely healthy and high-quality raw materials, which gives us peace of mind regarding the final product.
The project is highly specialized in wines that are produced in strictly limited editions, aiming to showcase the modern perspective of Bulgarian winemaking and to intrigue our audience for such types of wines. We have focused not only on technology, vineyard work, and cellar operations, but also on the product's visual presentation.
