Ruse Winery specializes in producing boutique wine series from 2,000 to 15,000 bottles. It was established in 2005 by brothers Plamen Bobokov and Atanas Bobokov and enologist Tsanko Stanchev. It is housed in a unique military facility with nearly 200 years of history. One of the goals for the master winemakers is to preserve the traditions and achievements of winemaking in the Ruse region. In 2005, the first wines were produced in the cellar from the Traminer, Sauvignon Blanc, Chardonnay, Vrachanska Temenuga, Merlot, and Cabernet Sauvignon varieties. The grapes are specially grown in selected vineyards from regions that have been studied for decades.

Control over the quality of the grapes begins with monitoring all agro-technical activities carried out by grape producers. The transport of hand-picked grapes in crates is carried out by the winery with refrigerated trucks at a temperature of 12-15 degrees Celsius.

The winery applies gentle technologies for grapes and wine to preserve the fruit character and varietal aromas to the maximum extent. Fermentation is carried out with pure cultures of wine yeasts in small oak and stainless steel fermenters, and specifically for the Chardonnay variety, in new French and American oak barrels. We carry out temperature control at every stage of the process.

Behind the ancient stone walls, up to 2.30 meters thick, which guarantee a constant year-round temperature, the wines age in French and American oak barrels.

The winery's capacity is 150,000 kg of grapes, from which about 110,000 bottles of wine are produced.
