The wine is vinified in concrete eggs from the manufacturer Nomblot. Mark Nomblot, who is involved in organic farming, is the ideologist behind this vessel for wine fermentation, and together with Michel Chapoutier, they created the first such vinifier in 2001. The volume of our concrete egg is 6 hl. The material it is made from – concrete – allows for micro-oxygenation of the wine due to its fine porosity. It is also a very good insulator, and the temperature inside the vessel is not affected by the external environment. It has been proven that the temperature at the bottom of the vessel and at its very top differs by a maximum of 1°C, and this temperature is maintained for a long period of time. The egg shape creates conditions for the fine lees to move within the wine. Fermentation in a concrete egg proceeds slowly, lengthily, and calmly. Alexandra BETON EGG Chardonnay is a wine of great length and structure. The concrete preserves and expresses the characteristics of the Chardonnay variety. Due to its neutrality, it emphasizes the minerality of this wine, stemming from the distinctive terroir of the Rakitnitsa vineyard with its high-carbonate soils, exposure, and climate.
