Description
The wine is vinified in large clay amphorae, known in Georgia, from where they were purchased as KVEVRI. Kvevris are made of clay and have been used for wine production and storage since ancient times (from 8000 BC). They are oval in shape and have a capacity of 2500 liters. According to Caucasian tradition, they are buried in the ground, as is the case for Alexandra KVEVRI Sauvignon Gris, where the temperature is constant. Kvevris are produced by hand, requiring a lot of effort and patience. The craft of kvevri making is passed down from father to son. The kvevri vinification method was declared part of UNESCO's world cultural heritage in 2013. Clay is a neutral, living, and breathable material that allows the wine to develop without burdening it with external aromas not originating from the grapes, as is the case with oak, and without "suffocating" it, as with steel. The maintenance and hygiene of kvevris require great care and manual labor, but unlike wood, clay does not age or change its characteristics. White wines vinified by the ancient method are known as "Amber Wines." This method yields exceptionally interesting results. It is made with long maceration and fermentation – the grapes, along with the solid parts, are placed in kvevri and sealed with clay immediately after hand-picking. The fermentation is WILD, without the addition of yeasts or enzymes.

The nose is fruity and intense with pronounced accents of quince, quince jam, and ripe pear.
Medium-bodied, lively and firm in the mouth with a very long, attractive finish reminiscent of quince jam and pears.
