The Peter Sölva winery is one of the oldest wineries in Caldaro. We are a family business that has been passed down from father to son for hundreds of years. Documents from 1731 show that our family has been growing grapes, producing and selling wine continuously for 10 generations.

Grape Variety: Cabernet Sauvignon, 3% Merlot, 1% Lagrein, 1% Petit Verdot => this selection is the choice of the best batch or edition from the Cabernet Sauvignon harvest.

Description: This Edizione Rossa is a Cabernet Sauvignon that is unsurpassed for us due to its selection from the best barriques after about two years of storage and then another year of aging in barriques. It is a creation that deliberately breaks the rules. The complexity of the aroma and palate, and in particular its power and versatility, make this Amistar Edizione Cabernet Sauvignon particularly interesting for demanding moments.

Development: Mechanical destemming, traditional mash fermentation in stainless steel tanks at controlled temperature. Extraction of about 30% of the juice to obtain an exceptionally good juice to skin ratio. That is, more skins and much less must, to ensure ideal maceration or extraction respectively for the Amistar concept. After fermentation is complete, the wine is extracted from the pomace, all batches of Cabernet Sauvignon are collected in the available quantities from this vintage and stored in barrique barrels for biological acid degradation and for two years of development.
