Chablis Grand Cru Bougros 2022, Domaine Billaud Simon Chablis 0.75
Domaine Billaud-Simon was founded in 1815 by Charles Louis Noël Billaud after his return from the Napoleonic Wars. He planted vineyards in his family properties, which were later expanded through the marriage of his relative Jean Billaud to Renée Simon in the 1930s. Located behind high walls near the Serein river, the winery is currently run by Jean's son, Bernard. It is known as one of the best producers in Chablis. Billaud Simon's 20 hectares in Chablis include vineyards in 4 of the 7 Grand Crus: Blanchots, Les Clos, Les Preuses and Vaudésir, as well as four leading Premier Crus: Fourchaume, Mont de Milieu, Montée de Tonnerre and Vaillons. They also produce AC Chablis from their own fruit in Kimmeridgian (rich in limestone, clay and marine fossils) soils surrounding the 1er and Grand Cru vineyards.
The name of this climat, which can be spelled in several different ways, comes from its geographical location. It is located at the foot of the "Bougros" hill. Just a few meters from it flows the Serein river, which in the past often flooded. For this reason, the path led along "la pierreuse", just before the "boquereau" and over time became "Bougros", which means "narrow path along the water's edge" (Bouque in Old French means "narrowing").
An exceptionally rich Grand Cru. The nose reveals intense mineral notes combined with aromas of candied fruit. The palate is rich and full-bodied with hints of ginger. The structure is both firm and round. Elegant finish with lingering saline notes.
The winery is currently in the process of converting its vineyards to organic farming.
