In the winery, grapes are destemmed before a short period of cold maceration. Fermentation takes place in both stainless steel and oak before being put straight into barrels for maturation. Varying quantities of new French oak are used depending on the status of the wines, with a higher proportion of new oak being used for the Grand crus.
