The 35 hectares of vineyards are planted with Sémillon (75%), Sauvignon Blanc (23%), and Muscadelle (2%). Harvesting is done manually over 10 times, waiting for the perfect bunches for these sweet and rare wines. Fermentation takes place in oak fermenters for 3 to 4 weeks. Aging then occurs for 18 months in 100% new barrels.
