Description
Steeped in history, this 13th-century English fortress, whose square tower is typical of military buildings of that era, was converted into a winery in 1643. The wine is called "Coutet," derived from the Gascon word for "knife," which expresses sharpness, vitality, and freshness, reflecting a unique style. In 1788, the estate was acquired by Gabriel-Barthélémy-Romain de Filhot, president of the Parliament of Bordeaux and already owner of Château Filhot in Sauternes. In 1794, Filhot was guillotined, and the estate passed to his grandson, Marquis Romain-Bertrand de Lur Saluces. The 35 hectares of vineyards are planted with Sémillon (75%), Sauvignon Blanc (23%), and Muscadelle (2%). Harvesting is done manually over 10 times, waiting for the perfect bunches for these sweet and rare wines. Fermentation takes place in oak fermenters for 3 to 4 weeks. Aging then occurs for 18 months in 100% new barrels. Tasting it reveals a surprising wine, as it is fruity and round without being overly sweet, offering an impressive freshness that can be paired with many dishes.
