For this Malvasia, it takes almost three weeks, but with selected yeasts and at a controlled temperature. At the same time, partial malolactic fermentation was also carried out. The wine then ages in 225-liter oak barrels for two years, including some new ones. The result is a wine with an intense golden-yellow color, an oily texture, a rich aroma, and on the palate, notes of caramel and vanilla. Clean, without volatile acidity or oxidative notes.
