Premium Oro Bailén extra virgin olive oil is obtained from olives from the so-called early harvest, usually in October, when real olive juice can be extracted at their optimal ripeness. In this way, the beneficial ingredients from the fruit are preserved in the olive oil to the greatest extent, and the palette of aromas and flavors is rich and intense. In early harvest olive oils, the three main characteristics of premium oils are particularly distinct: fruitiness, bitterness, and pungency.
An important factor for the high quality of olive oil is the rapid processing of the fruit (within 2-3 hours of harvesting), as well as the temperature regime during oil extraction. Cold extraction is done solely by mechanical means, with the temperature below 22°C (whereas the standard is up to 27°C).
It is characterized by a bouquet of fresh aromas of green banana, almond, green tomato, and olive with a medium fruity intensity. The balanced levels of sweetness and pungency make it exceptional for pairing with meat dishes, pasta, vegetable dishes and salads, fruit salads, sauces, and desserts.
Storage of the finished product is carried out in large metal tanks in a controlled temperature environment (18°C - 22°C), with bottling taking place as needed.
