Its composition is dominated by star anise and herbs, which give it its typical amber color. When mixed with water, it takes on a mysteriously cloudy sheen.

In 1805, Henri-Louis Pernod established the first absinthe distillery in Pontarlier, France. From the first Maison Pernod-Fils distillery to the notorious ban on absinthe, from La Belle Époque to the rediscovery of the original recipe, Pernod's rich history spans more than two centuries. In 1926, Pernod returned with an anise-flavored drink (40°) that replaced absinthe and is still produced to this day.
