Pet Nat Ribolla 2021, Fedora 0.75
The Fedora winery is located in the part of the Vipava Valley called "Vipavska Brda", where the Vipava Valley and the Karst meet: a unique climate with lots of sun during the day, remarkable temperature excursions between night and day, and the Bora winds that cross the vineyards. Fedora is a family affair, starting from the great-grandfather of Valter, the current owner, who cultivated the vineyards in Dolanci since the end of the 19th century, and continuing with his grandfather, his father, interrupted only by the nationalization of the vineyards after the Second World War, which forced them to give the grapes to the state cooperative, like everyone else. Now Valter, together with his family, decided, after several years of experimentation, to return to Dolanci from Ljubljana and no longer give the grapes to the local cooperative. They immediately dedicated themselves to restoring old vineyards and varieties and planting new ones. The choice fell on local varieties: Ribolla, Zelen, Pinela, Refosco, Picolit, Vitovska, and many, many other local varieties now make up almost the entire production, with a small amount of Chardonnay remaining from the time when international vineyards predominated. Biodynamic principles govern the work in the vineyard and minimal intervention in the cellar, to obtain exceptionally fresh, saline, and varietal wines.
Pétillant Naturel. Sparkling organic wine. Nothing is added, nothing is taken away. The wine, unfiltered (together with the yeasts), is bottled before fermentation, where the fermentation finishes. The sediment remaining in the bottle ensures the wine's durability. The result is a rustic yet delicate, sparkling and fruity pét-nat.
