Description
The Fedora winery is located in the part of the Vipava Valley called "Vipavska Brda," where the Vipava Valley and the Karst meet: a unique climate with abundant sunshine during the day, remarkable temperature excursions between night and day, and Bora winds that sweep through the vineyards. Fedora is a family endeavor, starting from Walter's great-grandfather, the current owner, who cultivated vineyards in Dolanci since the late 19th century, and extending to his grandfather and father. This lineage was only interrupted by the nationalization of the vineyards after World War II, which forced them, like everyone else, to provide their grapes to the state cooperative. Now, Walter, along with his family, after several years of experimentation, decided to return to Dolanci from Ljubljana and no longer give their grapes to the local cooperative. They immediately dedicated themselves to restoring old vineyards and varieties and planting new ones. The choice fell on local varieties: Ribolla, Zelen, Pinela, Refosco, Picolit, Vitovska, and many, many other local varieties now constitute almost all of their production, with a small amount of Chardonnay remaining from the time when international varieties took precedence. Biodynamic principles guide the work in the vineyard and minimal intervention in the cellar to produce exceptionally fresh, saline, and varietal wines.
Before the end of fermentation, we bottled the wine together with the lees (without filtration). The natural residual sugars in the bottle converted into alcohol, creating fizz in the bottle. Thanks to the lees in the bottle, Pet Nat is a living wine that does not require the addition of sulfur. Fedora Pet Nat is fruity, rustic, and at the same time delicate. It should be served chilled in red wine glasses.
