When he started working with wine, he became obsessed and it quickly became his passion. Since then, he has perfected the art of extracting the best varietal expression of old Sangiovese vines from some of the best hillside vineyards around Tuscany. His latest release is a testament to his craftsmanship, creativity and passion.
""Testamatta"" literally translates to ""crazy head,"" but in colloquial usage its meaning is very complex, describing a person who is positive, creative, and passionate – it couldn't be a more fitting name for Bibi's most personal wine. He openly admits that he has never read a book on winemaking, and his approach is not based on scientific rigor. Instead, he prefers to do everything by touch, smell, and sight, spending hours in the vineyards and cellars, thinking, tweaking, and perfectly blending every element that makes up this most extraordinary work of art that is Testamatta.
Bibi uses a blend of Sangiovese from 5 different small, high-altitude vineyard parcels in the Tuscan hills. All of them are old vines, some more than 100 years old, grown on different soils. The use of grapes from a mix of vineyards is similar to the style of an artist using different colors and techniques to create a beautiful painting. The old vines give striking concentration, the blending of vineyards – unmatched complexity, and the altitude of the vineyards, along with Bibi's creativity and light touch – energy, freshness, and brightness.
