The Erwin Sabathi winery is managed by Erwin and his wife Patricia. Erwin's two younger brothers, Gerd and Christoph, also hold key positions in the management of the family business. The winery has been completely modernized, and all modern technologies for sustainable viticulture have been introduced. Nevertheless, the Sabathi family relies primarily on manual cultivation of the vineyards due to the steep slopes on which the vineyard is located.

The tradition of viticulture has existed in the Sabathi family since 1650. The progenitor of the family is Jörg Sabathi. Generations of Sabathi family members cared for the wine estate in Pilchenhof until 1914. Subsequently, the winery moved to the Knapenhof estate in Sernau until 1938. In 1938, Johann Sabathi sold the Knapenhof estate, and together with his wife Ludmila, he purchased the current location where the Sabathi family's estate, vineyard, and winery are located today in Pössnitz.

In the 1950s, Johann Sabathi discovered the potential of "Pössnitzberg" and processed his first harvest. At that time, the Sabathi family's vineyards were already cultivating their 50-year-old Sauvignon Blanc vines and were well-known throughout Austria.

In 1968, Erwin Sabathi Sr. took control of the winery. Since then, every vintage of wines from the Single Vineyard Pössnitzberg has been stored in the family cellar. He gradually expanded and developed the winery by purchasing and leasing additional vineyard areas. A great success was the reproduction of the precious DNA of his father's Sauvignon Blanc vines.

The modern vision of the winery began its development in 1992, when Erwin Sabathi Jr. took over the management of his parents' family winery. On this basis, he founded his own winery "Erwin Sabathi". The next step in the process was the construction of a new winery, located in close proximity to the family estate. In 2004, the first harvest was vinified in his new winery. As the owner of this new winery building, he was awarded the "Viktor Geramb-Dankzeichen for incredible constructions in Styria" distinction.
