Prager Winery is located in Weissenkirchen, in the southern Austrian wine region of Wachau. The family has been cultivating grapes for many generations. The estate, which belonged to the Michaelbeuern Monastery at the time, was first mentioned in 1302 as "Haus am Chling." In a letter of inheritance from 1715, preserved in the family archives, three vineyards are mentioned – Hinter der Burg, Leber, and Ritzling, which are still owned by the family today. Franz Prager (1925-2019) is considered a pioneer and was the first chairman of the Vinea Wachau Nobilis winegrowers' association from 1983 to 1988, playing a decisive role in shaping the wine heritage of Wachau. His son-in-law Toni Bodenstein and his wife Ilse have been responsible for the business since the early 1990s. The company's motto is: "The wine must be a reflection of the site." In this context, Toni Bodenstein is also referred to as the "terrorist of Wachau."
The vineyards cover an area of 15 hectares, most of which are on steep terraces. They are located in the municipalities of Dürnstein (Hollerin, Kaiserberg, Liebenberg vineyards) and Weissenkirchen (Achleiten, Hinter der Bürger, Klaus, Steinriegl, Weitenberg, Zwerithaler). They are planted exclusively with the white varieties Riesling (70%) and Grüner Veltliner (30%). Premium wines include Riesling Smaragd Wachstum Bodenstein, as well as Grüner Veltliner Smaragd Achleiten from very old vines. Work in the vineyard and cellar is carried out in the traditional way. Essential quality criteria include working with indigenous yeasts and not using enzymes. Fermentation and aging take place in stainless steel tanks. The grapes are harvested by hand, sorted to eliminate botrytis, and sent directly for pressing, where they ferment, which Bodenstein describes as "controlled spontaneous fermentation." Toni Bodenstein prevents the occurrence of malolactic fermentation. Since 1996, Prager wines have been vinified entirely in stainless steel tanks. This minimalist approach reveals wines with precision and elegance, moderate alcohol levels, and a clear expression of origin. "Vom Stein sein" (from the stones to the wine) is Toni Bodenstein's motto, and his ideology is reflected in his gentle, minimal intervention methods in both the vineyard and the cellar.
