What is the secret to producing rosé?

No, rosé is definitely not a mix of white and red grape varieties, although its color might suggest this. Despite being a widespread claim, it is completely wrong. If a wine obtained by pressing white and red grape berries is offered on the market, it is not allowed to be sold as rosé wine, but must be labeled differently. The technology for producing rosé is common to both white and red wine. Rosé wine is made from red grape varieties, but using a method characteristic of white beverages. The main difference between red and white wine is that in the former, fermentation occurs with the grape skins, while in the latter, the skins are removed before the start of this process. And the pigment comes precisely from the skins. For rosé, the blue-colored grapes are in very brief contact with their skins, after which they are removed and ferment without them. This allows a very small amount of pigment, as well as a small amount of tannin (which is also found in the skins), to pass into the juice. This makes the wine not only lighter in color, but also lighter in consistency and taste than red wine.

Like white wine, rosé is also recommended to be kept in the refrigerator before serving. If the drink is drier, the optimal temperature is 10 degrees Celsius.
