What is characteristic of white wine?

Although there is a widespread misconception that white wine is made from white grape varieties, this is not always the case. The main thing that determines the color of this drink is its production technology. It is made from white and red varieties with light pulp, whose skins are removed before fermentation. It is in the skins that the coloring substances are concentrated, and after their removal, the light pulp of the grape and the almost colorless juice remain. It is important to remove all solid particles (seeds, skins, and pulp) after pressing so that no tannins pass into the liquid. The final color of the "white" drink, depending on the variety, is actually yellowish, golden, or amber.

What foods does it pair with?

White wines are generally lighter than red wines. This means that, as a rule, they go well with light food. The light drink is a suitable companion for fish dishes, chicken, lean culinary delights, cream sauces, and cheeses. They are lower in calories, and a glass of them is even allowed in some dietary regimens. When consumed in small quantities, benefits for the cardiovascular system and cholesterol reduction have been reported. Sauvignon Blanc is a quite versatile variety due to its high acidity. This is what gives it the cleansing taste that makes us want a sip between bites of food. Dry wines pair well with chicken, turkey, or salmon. A good addition to foods with fruit content (e.g., duck with oranges) are sweeter varieties with a fruity nuance (Riesling, Muscat). The higher sweetness is also a good contrast to saltier sauces.
