What kind of wine is Riesling?

This German white grape variety is typical of the areas along the Rhine and Moselle rivers in Germany. References to it in old German documents have been found as early as the 15th and 16th centuries. Even today, Germany accounts for about a quarter of the world's total planted Riesling grapes. During its cultivation, the "noble rot" method is often used, where water evaporates from the grapes, the grapes shrivel, and the sugar concentration increases. In Bulgaria, this grape is also cultivated, and a distinct variety, "Bulgarian Riesling," has been registered. The Bulgarian variety was selected in the 1950s from a cross between Riesling and Dimyat.
